Karen's Roll Recipe

Dissolve 2 T yeast in 1/2 c. warm water and 1 t sugar. Set aside. With electric mixer, cream 1/2 c. crisco, 1/2 c sugar, and 2 eggs. Add 1 c VERY hot water and 1T salt. Mix with mixer. Add yeast mixture and stir n 4 1/2 -5 c. flour. Let rest 5-10 minutes. Divide dough into 3, and roll out. Baste with melted butter if desired. Rise until double (1 hour). Bake at 400 for 8-10 minutes until golden.

Huckleberry Fruit Pizza

One roll pillsbury sugar cookie dough
Pat or roll into large circle, bake as directed. Cool.

Mix:
8 oz cream cheese
1 cup powdered sugar
1 cup cool whip
1 tsp vanilla

Spread onto cooled cookie crust, and top with huckleberry topping.

Topping:
3-4 cups huckleberries
1/2 c water
3/4 c sugar
2 TBSP corn starch
1 TBSP lemon juice

Cook 1 cup berries plus 1/2 c of water to a boil. Reduce heat and simmer 2 minutes.mix cornstarch and sugar, gradually add to the berries. Cook until thick and clear. Cool slightly, add lemon juice, cool completely. Add 2-3 cups berries. Spread on pizza.

Grandma Pallet’s Pie Crust

INGREDIENTS

• 5 cups pastry flour 
•1 lb. Shortening (cut into chunks) 
• ¼ cup brown sugar 
• 2 tsp. Salt 
• 1 tsp. Baking powder 

• 1 egg beaten 
• 2 Tbsp. vinegar 
• cold water Enough to measure one cup

DIRECTIONS

 Place flour in the bowl using cookie paddles
 Add brown sugar, salt and baking powder. 
 Put splash ring and lid on the bowl and jog on pulse until mixture has formed small pebble-size balls.
 Add shortening chunks
 Place egg in a cup and vinegar - mix with fork. 
 Add enough cold water to measure 1 cup. Mix well
 Add to flour mixture jogging the machine until dough has formed in the whips.
 Now your dough is ready to roll.
 Generously flour board and roll out pastry.
13"pastry circle for a 9" pie plate
Bake frozen pies at 400* for 1 hour

Huckleberry Pie

In a saucepan add:

1 c sugar
5 TBSP Cornstarch
1/4 tsp salt
1 c huckleberries
2/3 c water

Stir until it boils and is thick, cool, then add:

2 TBSP Butter
1 1/2 tsp lemon juice

When room temperature fold in 3 cups of huckleberries. Pour into prepared pie crust and bake at 425 degrees for 35 minutes.

Healthy Chicken Alfredo

Ingredients:

-1 Medium Spaghetti Squash
- 1 lb chicken breast
- 3/4 c cashews
- 1/2 cup coconut milk (canned)
- 1/2 cup chicken broth
- 2 TBSP avocado oil or ghee
- 4 tsp chopped garlic
- 1/2 white onion, minced
- 3 cups broccoli florets broken into pieces
-salt and pepper to taste
- 6 slices bacon chopped (optional, but is bacon ever REALLY optional?!?)

Directions:

- Preheat the oven to 375 degrees. Slice spaghetti squash in half lengthwise, and scoop out the seeds. Place the open sides down on a foil lined baking sheet. Bake for 40-45 minutes, or until tender enough to scrape out with a fork. (Or if you have an instant pot, placed scooped halves on rack inside pot with one cup of water. Seal and cook on manual for 7 minutes. Instant release.)

- While squash bakes, grill the chicken breasts seasoned with salt and pepper. Slice into bite sized pieces when cooked through.

- Blend the cashews, coconut milk, and broth in a blender until smooth.

- Shred squash with fork and transfer to a bowl

-In a large skillet over medium heat, saute the broccoli, garlic, and onion in oil or ghee util slightly softened (2-3 minutes). Add the sauce. Stir to combine.

- Stir in the spaghetti squash, and season with salt and pepper. Add the chicken to dish and stir. Continue to cook until the sauce simmers and the chicken is warmed. Serve hot!

Bran Muffins

Cook together:
2 cups boiling water
1 qt buttermilk
5 tsp banking soda
3 cups all bran buds
2 cups bran flakes

then cream together:
1 cups shortening (blend with sugar and salt first)
2 cups sugar
1 tablespoon salt
4 eggs
5 cups flour

Bake at 400 for 20-25 minutes
(makes a ton of muffin batter, good in fridge for up to week)

Angel Food Cake

Ingredients:

1 3/4 cups sugar
1/4 teaspoon salt
1 cup cake flour, sifted
12 egg whites (the closer to room temperature the better)
1/3 cup warm water
1 teaspoon orange extract, or extract of your choice
1 1/2 teaspoons cream of tartar

Directions:

1. Preheat oven to 350 degrees F.

2. In a food processor spin sugar about 2 minutes until it is superfine. Sift half of the sugar with the salt the cake flour, setting the remaining sugar aside.

3. In a large bowl, use a balloon whisk to thoroughly combine egg whites, water, orange extract, and cream of tartar. After 2 minutes, switch to a hand mixer. Slowly sift the reserved sugar, beating continuously at medium speed. Once you have achieved medium peaks, sift enough of the flour mixture in to dust the top of the foam. Using a spatula fold in gently. Continue until all of the flour mixture is incorporated.

4. Carefully spoon mixture into an ungreased tube pan. Bake for 35 minutes before checking for doneness with a wooden skewer. (When inserted halfway between the inner and outer wall, the skewer should come out dry).

5. Cool upside down on cooling rack for at least an hour before removing from pan.

Note: Since they're easier to separate use the freshest eggs you can get

Tomato Bisque Soup

3 TBSP Butter
6 cans of diced tomatoes (14.5 oz)
24 oz water
8 bouillon cubes
3 TBSP onion
1/2 tsp baking soda
5 TBSP sugar

Add all ingredients to large pot and simmer gently for 1 hour.

Add
1 c tomato paste
2 cups heavy cream
Pinch of parsley

Heat and serve. (Can be blended to less chunky texture if desired) Makes 1 gallon.

Easy Snickerdoodle Blondies

INGREDIENTS
  • 2 2/3 cups flour
  • 2 tsp baking powder
  • 2 cups packed brown sugar
  • 1 cup salted butter, room temperature
  • 2 eggs
  • 1 Tbsp vanilla
  • Cinnamon topping:
  • 2 Tbsp white sugar
  • 2 tsp ground cinnamon
INSTRUCTIONS
  1. Combine the butter, eggs, brown sugar, and vanilla. I used my mixer and it worked great!
  2. Add in the dry ingredients (flour and baking powder).
  3. Spread in a greased 9x13 inch pan. The batter will be thick almost like a cookie mixture.
  4. Combine the cinnamon topping ingredients and sprinkle over the top.
  5. Bake at 350 degrees for 25-30 minutes or until top springs back when pressed. Once it cools, it will harden more.

Caramel

1/2 c butter
1 c brown sugar
1 c corn syrup

Turn down and boil 5 minutes

Off heat add 1 can Eagle Brand

Creamy Hot Chocolate (Polar Express)

1 14 oz can Eagle Brand
1/2 c cocoa or 1 1/2 c-2c chocolate chips
1 1/2 tsp vanilla extract
1/8 tsp salt
6 1/2 c hot water
mini marshmallows (optional)

In large saucepan over medium heat, combine sweetened condensed milk, cocoa, vanilla, and salt. Mix well. Slowly stir in water. Heat through, stirring occasionally. Do not boil. Top with marshmallows (optional). Store covered in the refrigerator.

Cookie Dough Dip

1 pkg cream cheese
1 stick butter
2 T. Brown Sugar
3/4 c Powdered Sugar
1 tsp vanilla
1 cup chocolate chips (optional white chocolate chips)

Mix together and serve with vanilla wafers

Hot Spice Drink

5 qt water (20 cups)
3 c sugar
1 stick cinnamon
1 tsp whole cloves

Boil for 5 min then add
1/2 can lemonade concentrate
1/2 can orange concentrate

Orange Muffins

1 Orange- cut up
1/2 c orange juice

1/2 c dates
1 egg
1/2 c butter

1 3/4c flour
3/4 c sugar
1 tsp baking powder
1 tsp baking soda

cut oranges into 7 or 8 pieces. Remove seeds. Combine orange pieces and juice in blender. Add dates, egg, and butter to blender. Pour into medium bowl.

Measure flour, sugar, baking powder, and soda into separate bowl. Mix well. Pour over top of orange mixture. Stir to combine. Fill greased muffin tins 3/4 full. Bake at 400 degrees for 20 minutes. Remove from pans after 5 minutes standing time.

Makes 12 large or 16 medium muffins.

Glaze
Water Powdered sugar

Grandma Prince's Macaroni Salad

Cook 2 c. Macaroni, let cool
2 cups chicken chopped
2 cups celery chopped
1-2 c pickles chopped
Combine
Add mayo till right consistancy

grandma prince's hamburger soup

1 pound hamburger browned and drained

Boil
2-3 carrots chopped
4 potatoes chopped
2-3 stocks celery
Small onion diced

Add
Large can tomatoes puréed
Salt and pepper
1/2 tsp garlic powder
1/2 tsp gravo rich

Mix meat in and simmer until hot.

Whole Wheat Bread

This recipe is seriously the best wheat bread I have ever had. My friend Kristen shared a loaf when I was pregnant and even with constant morning sickness, I ate half the loaf! It is super soft (will stay soft for a week...if you can keep from eating it that long), and it freezes so well. Just make sure you don't add too much flour because it doesn't look like dough, more like goo when it is all mixed, but the bread is wonderful. 

This recipe is meant for a large Mixer (like a Bosch),  for my Kitchen Aid mixer I HALF the recipe.

8 cups hard whead-grind in a mill & make flour (for those of you just using store bought wheat this is equal to 12 cups of flour)

6 Cups HOT water
2/3 C oil
2/3 C honey
2 TBS dough enhancer
2 TBS wheat gluten *
2 TBS salt
2 heaping TBS yeast
2TBS tofu drink mix (can sub powdered milk)

Put the 6 cups Hot water from the tap into the mixer. Add the oil, honey and all but 2 cups of flour and mix until soft.

Add dough enhancer, wheat gluten, salt, yeast, tofu drink, and mix.

Add the 2 cups of flour that were remaining.

Add more flour if needed (don't be fooled, more often than not you don't need any) and mix to the correct consistency.

Knead in mixer for 11-12 minutes on low

Put about 1 TBS oil on counter and spread it around

Put dough on counter and roll into ball and cover. Let sit for 10 minutes.

Put into 5 greased bread pans and let rise for about 1 hour-until desired loaf size

Bake at 350 for 30-32 minutes.

This is a super soft and wonderful bread.
(* for old wheat add 1 TBS wheat gluten to each cup of flour)

Edit:-this last time I made it I only made 4 loaves since I have to do half of the recipe at a time and it made nice large loaves-which I think we will like better.

Grandma cookies

1 1/2 c flour
1 tsp soda in 1 tsp hot water
1 tsp salt
1 c oil
3/4 c brown sugar
3/4 c white sugar
2 eggs
1 c raisins
1 c chocolate chips
2 c oatmeal
1 tsp vanilla
1 tsp cinnamon
3/4 tsp nutmeg
3/4 tsp cloves

Drop spoonful on baking sheet at 400 degrees for about 8-10 minutes

Pumpkin Pie Smoothie

I found this recipe on the Vitamix website...and it is REALLY good! Best part is it is only 200 calories! 

 Pumpkin Pie Smoothie

Ingredients

  • 1/2 cup (75 g) pumpkin, fresh or canned
  • 1 cup (240 ml) milk
  • 1/3 cup (80 ml) sweetened condensed milk
  • 1 Tablespoon vanilla yogurt
  • 1 teaspoon pumpkin pie spice
  • 1 cup (240 ml) ice cubes

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 45 seconds or until desired consistency is reached. Top with whipped cream and a dust of cinnamon.

Tex-Mex Pasta Salad

My friend Andrea brought this DELICIOUS pasta salad to a Youth Conference campout a couple months ago. I could not stop eating it! It is seriously delicious. I love that it has a bit of a kick to it, but still mild enough that my kids loved it too! The Fiesta Ranch packet was harder to find than I expected though. So next time I find some in the grocery store I am going to stock up like crazy! :)
 
Ingredients:
 
12 ox bag spiral pasta (can be multicolored to be more festive), cooked and drained
1 red or green pepper, cut in pieces (I use a variety of red, orange, and yellow peppers)
1 can olives, halved
1 can garbanzo beans, drained
1 can kidney beans, drained
1 can corn, drained
1 red onion, thinly sliced (I only use 1/4)
1 pkg. grape tomatoes
1 cup cheese, cubed
1 avocado, sliced (add just before serving)

Mix together. Toss pasta salad with dressing.  Chill before serving.
Dressing:
2 Cups buttermilk
2 Cups Mayonnaise
1 pkg. Hidden Valley Fiesta Ranch dry dressing mix (must be Hidden Valley brand)

Enjoy!  It makes a lot, so be prepared. :)
